Pumpkin Seed Pesto
Ingredients
2/3 cup raw pumpkin seeds
1 cup fresh basil leaves, packed
3 raw garlic cloves
1/3 cup olive oil or avocado oil
2 tablespoons fresh lemon juice
Salt and pepper to taste
Directions
Use a food processor, immersion blender, or cup sized blender to blend all ingredients together until pesto is mostly smooth.
Store covered tightly in the refrigerator and enjoy within 24 hours.
