MEXICAN COLE SLAW SALAD
(A Party in a Bowl)
ADD TO LARGE BOWL
2 heads of organic cabbage (1 green, 1 purple) - chop or shred
1 bunch organic green onions (approx. 2 cups) chopped
4 ears of organic corn - cooked & cooked. Use knife to shred kernels off of ear into salad bowl.
4 - 6 large heirloom tomatoes or 8 medium sized - chopped
DRESSING
1 cup olive oil
1/2 cup white wine vinegar
1 teaspoon stevia (natural sugar alternative)
1 1/2 teaspoons hot pepper sauce (I like Melinda's Chipotle's Pepper Sauce or Brother Bru Bru's Chipotle Pepper Sauce)
1 teaspoon oregano
1 teaspoon chili powder
1 teaspoon salt
2 cloves garlic - minced
Pepper to taste
