Life Changing Bread
Ingredients
1 cup sunflower seeds
½ cup flax seeds
½ cup almonds
1 ½ cups rolled oats (gluten-free if needed)
2 T. chia seeds
3 T. psyllium husk fiber powder
3 T. coconut oil
1 ½ cups warm water
1 teaspoon Redmond Real Salt (or other high-quality sea salt)
Instructions
Put flax seeds, rolled oats and sunflower seeds in a blender and grind until you get a somewhat course flour.
Add your almonds and blend until they are finely chopped up or ground into a flour.
Pour this into a bowl and add your chia seeds, and psyllium husk fiber powder and sea salt and mix it all together.
Now use your blender to combine your coconut oil and warm water.
Pour into the bowl of ground up flour and stir quickly to combine. It will get thick quickly, so stir fast. It should quickly get to the consistency of playdough.
Scoop the dough out into a loaf pan that has been lined with parchment paper and press down firmly.
Let sit overnight or for several hours before baking (not necessary but will help make the nuts and seeds more digestible)
Bake in a 350 degree oven for 50-75 minutes. It is done when it sounds hollow when you tap on it.
Let the bread cool to room temperature completely before cutting.

Note: This bread contains no yeast or rising agents so it will be thick and dense, not fluffy and rounded like you may be used to. It will also taste better after being toasted. Another delicious way to eat this toast is with a generous drizzle of olive oil or pesto. Yum!
